LuxuryActivist (LA): How did you get the passion for fine cooking?
Stéphane Décotterd (SD): The cooking vocation came to me quite young when looking at my mother while she was cooking. Nevertheless, I owe my discovery for the Grande Cuisine to my former Chef, Mr Gérard Rabaey. It was when I started working in his kitchen that I got a sort of revelation about my future job. 

LA: In a few words, how would you describe your restaurant, Le Pont de Brent?
SD: It is an institution in Montreux that I was lucky to resume with my wife five years ago. Since then, we do all our best to work with exceptional products by caring about the techniques and the cooking. We propose a creative cuisine varying throughout the seasons, associating the great gastronomic tradition to a certain modernity. 

LA: What is the recipe or accomplishment you would be the most proud of?
SD: Difficult to say… whenever I cook for my family and see them feast!

LA: How is Switzerland different from other great countries in cuisine like France from a Gastronomic point of view?

Depuis, nous nous efforçons de travailler des produits d’exception en soignant les techniques et les cuissons. Nous y proposons une cuisine créative rythmée par les saisons associant la grande tradition gastronomique à une certaine modernité.

LA: Quelle serait la recette ou réalisation dont vous seriez le plus fier ?

The Leman Lake region has a magnificence landscape. The lake and the surrounding mountains makes this region a very special place to be. Nature is not the only amazing topic you can find here around. Gastronomy is also that traditionally is anchored in the region. One of the stars is Stéphane Décotterd and his restaurant Le Pont de Brent. LuxuryActivist experienced this culinary journey thanks to the Nespresso Gourmet weeks and here below the narration of this exquisite adventure.

How to describe the amazing story of Stéphane Decotterd? He was born in Fribourg in 1976. He is only 15 years old when he starts his apprenticeship at Le Petit, à Saint-Légier, chez André Minder. After a solid experience at Relais&Chateaux and a restaurant in Le Grisons, he work for Le Pont de Brent in 2005. It is actually his second time at this restaurant in the highs of Montreux. 2008 he wins the KADI for Best Swiss-Chef. This award opens the doors for the worldwide competition, Bocuse d’Or and he finishes in the top 5 best chefs in the world. In January 2011, Stéphane Decotterd takes over Le Pont de Brent. In October in the same year he gets a 18/20 in the Gault Millau and one month later 2 Michelin stars. Since then, his amazing and continuous work makes Le Pont de Brent as one of the best restaurants in Switzerland and probably one of the best in Europe.

During the Nespresso Gourmet weeks, LuxuryActivist was lucky to have diner at Le Pont de Brent and the culinary journey was outstanding. Here more details about the exquisite dishes we got and the attentions to details that every single gesture, presentation or contact had. Truly one of the best experiences ever.

The first minutes when you open the door and enter in this restaurant is a feeling of “welcome”. In deed, you have more the feeling to be invited to an elegant friends home than a regular restaurant. The personnel who welcomes you are very smiling and they are truly happy to welcome you. There are not too many tables so there is a private feeling, yet quite friendly so you would feel at easy to talk normally to the people having lunch or diner with you. Natural materials like wood and stone are happily placed together to give you the warm feeling of a timeless elegance. Everything is very chic but un a natural and authentic way. We were there on a Friday evening, so it was the best way to finish the week. We discovered an amazing culinary experience driven by the creative mind of Stéphane Decotterd.

From the bread, made by a proud artisan from the village to the Swiss cheese, one better than the other, you feel the passion for high quality ingredients and the aim to honor the people who have been producing them. Le Maki de Biche d’Ecosse, Crème de Foie Gras et crumble d’Espresso Origin Brazil

With this starter, our Swiss Chef re-interpretates the deer from Scotland in a Japanese style by rolling it façon-maki. Then, the originality takes also place by blending Foie Gras and a Espresso Origin Brazil by Nespresso. It is said that this coffee is sweet and satiny smoothly. A pure Arabica coffee, Espresso Origin Brazil is a delicate blend with a smooth texture and an elegantly mild and sweet flavor enhanced by a note of lightly toasted grain.

The lieu Jaune, Pollachius pollachius, or The Atlantic pollock is a very interesting fish. It’s flesh is consistent and resists well cooking yet its taste is delicate and subtle. Here the fish is served with an emulsion of coconut milk, coriander and lemongrass. East meets West. Very flavory and tasty. Perfect to start. Loctudy is a place in Brittany-France. It is well known for the quality and the freshness of the fish, so here we had an amazing Pollock.

L’Epaule d’Agneau de lait de Sisteron confite, Ras el Hanout, pois chiches et Panisse.

The following dish is young Lamb from Sisteron, Ras el Hanout, chickpeas and Panisse. The Lamb is candied so the blend with the chickpeas is amazing. A very colorful dish that definitely brought a water-mouthering effect.  The Panisse is an interesting recipe from the South of France, based on chickpeas. Why Lamb from Sisteron? Well because probably it is one of the best in the world. The Lamb from the Sisteron region lives between 70 to 150 days. They are all fed with maternal milk for a minimum of 60 days. Then they eat herbs and straw, and can get cereals as complement. The sheep need to be on the fields a minimum of 6 month per year. It has to be 10 sheep by ha and the surface needs to be a minimum of 10ha and be a natural field. Only all these conditions can give the label of Sisteron’s Lamb.

There is a very strong tradition in Piemont for chestnuts. People there are very proud of their chesnuts and they use it very often in the kitchen. Stéphane Décotterd re-imagine this ingredient with the association of Coffee and lemon. It was an incredible firework at the end of our culinary journey. Naturally we gave the final touch with a Nespresso Grand Cru to wrap up the meal.

The luxury market is supposed to grow every year by 3 to 7% worldwide. This means that it is an industry with a strong appealing to people. There is an ongoing increase of interest for luxury news around the world and the young generations are ultra-connected, super-informed and craving for luxury brands.

The luxury market is getting younger

While emerging markets like Brazil, India or China have ups and downs, mature markets like the UK or the US are pretty stable or even slightly growing. This generates a strong interest on Luxury news as the luxury customers are more and more keen to discover more about brands, products and services. The younger they are the more informed they want to be. Among the younger customers, there are the Millenniums. They are below 25 years old and some of them have money. Millenniums have more than $US 200 billion to spend and they contribute to $US 500 billion indirectly through influencing their parents (source: US Chamber of Commerce). By 2017, this generation is supposed to outspend the BabyBoomers. They are “hyperly” connected and engage with luxury brands in ways we would not imagine. They are also very demanding and traditional luxury is not enough. They seek very exclusive experiences and products, more than previous generations. We talk now more about hyper-luxury. Technology definitely opened the possibilities to engage with this young generation across the world but it is not only that.

The luxury news landscape, a moving media horizon

The young generation is seeking authenticity and justice which becomes a challenge for brands. Also, they communicate differently and choose media in ways that previous generations would not. The development of internet has definitely allowed more ways to bring the experience of luxury to a wider audience. In the media side, luxury news media has also increased as the audience represent a very interesting target.
First there is an incremental need for qualitative luxury news. Second, brands are also looking for qualitative and relevant media to advertise their campaigns. Both sides of the equation generate a tremendous activity across all media.

LuxuryActivist had the pleasure and the honor to experience lunch time there in the context of the Nespresso Gourmet Weeks. Since 2009, Nespresso organize the Nespresso Gourmet Weeks in partnership with Gault et Millau. The main objective is to celebrate passion around good food through local amazing talents. In Switzerland, Nespresso cherry picked 15 restaurants, all amazing talented chefs. During this week, the chosen talents get inspired by Nespresso Grand Crus and incorporate them in a specific menu.

This is how Damien Germanier expressed his approach of the Nespresso Gourmet weeks:

« In my restaurant I aim to offer exceptional products, delicious dishes, high-quality mineral water and marvelous coffee. I chose Nespresso without hesitation due to its extraordinary and constant quality of coffee. »

So here are the following dishes we got to taste during an amazing lunch in Sion. As you will see, the textures, colors, tastes are all studied at the smallest millimeter, so that you will get a full experience of what is the true culinary art.

Tarte Coulante à la Courge, émulsion au Lungo Origin Guatemala. Potimarron confit, sa crème glacée butternut et noix de Muscade.

A blend of Arabica and washed Gourmet Robusta coffee, Lungo Origin Guatemala is a smooth and balanced blend with intense dry and malty cereal notes underlining its bold character. A fine Arabica from Guatemala brings a delicate balance, rich complexity and a silky texture to this lungo, while a specialty washed Robusta that is carefully and selectively processed, imparts structure and smoothness. The latter also reveals the typical cereal taste of Robusta, clear but non-aggressive. With this first dish, Damien Germanier proposes a lively experience to put you in appetite. A Sinking Squash mini-pie highlighted with a Nespresso Lungo Origin Guatemala coffee emulsion. The candied Potimarrons were amazingly served with a butternut ice-cream and nutmeg. It was interesting to start with this combination as it opened up our senses and the water-mouthering effect put us in the perfect mood to start our meal.

Not in the menu but all aligned with the free spirit of the artist in the kitchen.

Despite the fact we had a specific menu, Damien Germanier always follows his intuition and delivers the best experience you could imagine. So we were lucky to experience a very creative approach and got extra courses for the pleasure of our eyes and taste. From the Amuses-bouches to start followed by a Beed-carrots and a great scallops, our culinary journey was one of the bests ever.

The way we started lunch gave us immediately the full scope of what we would expect from such a talented Chef. He completely deserves is score at the Gault Millau and Michelin. When you like what you do everybody can see it. In the case of a Chef, you can taste it as well.

With this dish, Damien Germanier expresses all the poetry about nature. With this highly qualitative Veal rib roast, our Chef tried to translate the beauty and the colors of a “walk in the woods”. The veal is underlined by Pine fragrance, red baies and mushrooms and a homemade thyme liquor. Little pieces of bread were tainted in green in order to give you the feeling of the woods vegetation. Outstanding.

Before the dessert, we needed to highlight the Cheese-plateau of this restaurant. Purely wonders. Vacherin, Gruyere and others Bleues were populating the “Chariot à Fromages”. The person serving it was ultra-competent in the matter and could guide you to the best choices based on your tastes. State of the art.

Déclinaison autours du Dulsâo do Brasil: Fine Pana cotta, Tuiles et ganaches, Crème glacée.

A pure Arabica coffee, Dulsão do Brasil is a delicate blend of red and yellow Bourbon beans from Brazil. Its satiny smooth, elegantly balanced flavor is enhanced with a note of delicately toasted grain. Subtly sweet, red and yellow Bourbon coffee beans are grown in the hill-top plantations of southern Brazil. They are harvested by hand, then pulped and sun-dried to allow the mucillage sugars to infuse the bean with a mellow flavour. Damien Germanier tried to play with contrasts with the Chocolate, pana cotta and ganaches. Very graphic designed and also very surprising in the mouth. The little mint leave was a true explosion in the mouth by blending with the warmth of the other ingredients. What a marvelous way to finish a lunch. Last but not least, we finished with a Nespresso Grand Crus coffee and it was the wrap-up.

Microsoft Office 365 – Product review – Only for Pros.

This month I could experience the new Microsoft Office 365. Microsoft designed the Office 365 platform to bring together its existing online services (such as the Business Productivity Online Suite) into “an always-up-to-date cloud service” incorporating Exchange Server (for e-mail), SharePoint (for internal social networking, collaboration, and a public web site), and Lync (for communication, VoIP, and conferencing). Plans were initially launched for small business and enterprises; the small business plan offered Exchange e-mail, SharePoint Online, Lync Online, web hosting via SharePoint, and the Office Web Apps, with the enterprise plan also adding per-user licenses for the Office 2010 Professional Plus software and 24/7 phone support.

MS Office 365 Experience Summary

Microsoft Office 365 is by far the best user experience on Mac of an MS Office until now. The layout and the functionalities are all there. The Installation and the set up is pretty intuitive and quite adapted to a mobile person. Unfortunately the installation did not work perfectly for me, it was not very clean.
After a whole week, Office was still asking me to activate the pack online. Please note that the Mac version does not includes Access and Publisher in the suite, which is included in the PC version. The OneDrive experience is great but not better than any other possible “private” usage of iCloud or DropBox for a Mac user. If you are a PC user you will definitely be happy with it.
I believe that MS Office 365 is adapted for a Professional client that might use all the features like sharing documents, skype or sharepoint features, etc. Last but not least, it is on an annual subscription. So if you do not pay every year, all the softwares get into “read-only-mode” so you cannot edit or create new documents. The main goal is to have a pretty fair license price  with a very large cloud stockage. That is why for me it is a Professional tool above all.
In conclusion: the best Office experience on a Mac ever but a product related to a professional customer.

MS Office 365 – The week test, day by day

As a blogger, I usually write articles from different locations: home, public transports, bars, events, etc. So the goal of the test was to write a 1500 words article during a week. And it all started with the new Office 365 download.

1.25Go for the installation package. I first tried on 4G, the download panel said 25hours. I found a better choice to ask for the WiFi password of the place where I was. Basically in 10mn it was done. Once all the package was downloaded, just needed to follow the step by step process. I needed to connect with a Microsoft account, which I did not have. So I created one.  And the installation process started.

During the installation process, I got a pop-up window from Microsoft updates saying I needed to update Office. I could not skip the window, so I thought it was a normal part of the installation process. And then my issues started.

The MS update never finished and the installation process froze. I got stuck during several minutes with the following panel on my screen. It was saying remaining time one minute. After 20mn I decided to kill the installation process and restart all over again. I did the MS updates first and then I opened the installation process package. If Microsoft is reading this, you might want to check possible interactions between MS updates and the installation of the new package.

After doing the installation a second time, everything worked well, so I could launch word and start writing  my article. I must confess that I am pretty much confortable with IT issues. I would not imagine my father or mother in the middle of the messy installation. What we must see here is that the previous 2011 Office I had was replaced by the new one. So no way to go back as I do not even have the box with the CDs anymore. Anyway things seemed to be fine so I started immediately to write my new article on Word.

My week was then orchestrated by several moments of writing, in the train, on desktop then on my mobile, back to desktop…. Basically a nomadic multi-screen life.

As expected, I could access my documents stocked in the OneDrive, the Microsoft cloud, from anywhere with my different devices. I used mainly Word and also MS Notes that I did not know. Practical to do lists of things.

No matter where I was, as far as the internet connection was there, I could access all documents without any problems. I did personally a mistake: I erased the document I was working on. From the word document I could not retrieve the trash anywhere. I was on mobile. After some research online, I discovered there is an app for OneDrive. I downloaded it and could find the trash and the erased document. According to what I read, OneDrive keeps all documents in the Trash for 30 days. I must say I was pretty happy to get my document back, I have already wrote 600 words 🙂

Talking about mobile, there is a great feature in the mobile version of Office 365: there is a adapted vision mode in order to make what you are writing bigger. It is much more confortable for the eyes, especially  if you are writing for several minutes. This functionality was really a good one. In the image below you have the comparative. In the left side you have the entire document and in the right side the adaptative mode.

5 days after the start of the test, I got an unusual issue. I found myself in a place where there was no internet connection (no WiFi and no 4G). So when I tried to open my word document I got the following window appearing, asking me to connect or to purchase the pack. As you can imagine I could not connect, so I was blocked. According to my Office, I did not activate it. The strange point is that I have been using it for the past 5 days without any problems or any warning message. When I got a proper connection back, I opened my document without a problem and continued working. The next day I tried something: I cut the internet connection of my computer and opened the office. I got the same message. Apparently after the installation you need to activate the pack online. Unfortunately I was not aware of this as the program did not say anything. So I went back online, clicked on the Word menu and clicked on the “Activate Office” option. If you do not do it, the entire Office goes “Read-only-mode” so you cannot create or modify any document. Once it was done, I could go off-line without problems and work normally. I think Microsoft needs to activate the Office at the moment in which we add the product key. Something is missing in the process as I did not know an activation was required. Weird.

Friday was my last day of testing as my blog article was supposed to go live. I had my texts and the pictures. I did not use the pictures stockage on the OneDrive as I had them in my iPhone and in my mac thanks to my iCloud service and the magic of Apple operating while you sleep :-). I published my article without a problem and my experience with Office 365 ended. You can check the final result here:

In Conclusion, I think Office 365 is the perfect solution for a professional clientele. You can have a fair price for your licenses, a quite huge stockage solution and all the business functionalities integrated in one place. If you are into project management and document sharing, you will be happy. Several functionalities allow to co-work on documents. You can manage user rights and use functionalities like sharepoint, Skype and Lync in order to make your project move on. The annual renewal is something that makes completely sense for corporate business as each company can manage its users accesses.
Now, from a private customer perspective, I think you do not need Office 365. It has great features but frankly you will not use half of them. You might also be able to find the same functionalities for cheaper or for free up to a certain level. The annual subscription might also be a blocking point for private customers as you might not want to pay 120CHF (110US$) every year to being able to use your Office. The “Read-only-mode” sound to me a little harsh to accept. In my sense, Office 365 did not improve my blogger experience as most of the Office 365 functionalities I used were already in place for me within my Apple environment. I still believe Office in general have improved a lot. My only true concern is the installation that for me it is not yet very intuitive and clean.
