Since I live in Switzerland, many people around the world keep asking me questions about the country. How is it to live here? Is it really as beautiful as we can see on TV? Do you have a secret bank account? Most of all: Is the Chocolate really good, and can you send me some!

Generally, I must say I am a good ambassador for the country and no: I do not have a secret bank account (at least I would not say it here obviously). There is one thing I always bring with me, as a good ambassador for Switzerland, while travelling is Swiss chocolate. Know-How and quality are purely magical. Very recently people started asking me about the ingredients they can read on the packages of Swiss chocolates. One ingredient caught my attention; Soy Lecithin. Why do we need it and why Swiss Chocolate brands use it? Here is an explication that hopefully you will find useful.

What is Soy Lecithin And Why People Talk About It So Much?

First things first, here is a bit of history about Soy Lecithin. The word Lecithin comes from ancient Greek “Lekhitos” which means “yolk”. This is due to its discovery. It was in 1845 when French Chemist and Pharmacist Theodore Gobley isolated lecithin from egg yolk. He named it Phosphatidylcholine lécithine. Once discovered, Mr Gobley established the complete chemical formula in 1874. During this time he managed as well to demonstrate the presence of Lecithin in a whole variety of biological materials, which includes venous blood, human lungs, liver’s bile, brain tissue, fish eggs, Sunflower and Soya Beans oils.
Today, most of the lecithin used in the market comes from Sunflower oil and Soya beans which is a much more efficient way to produce it rather than from sheep brains or fish eggs. Why lecithin became so popular? Generally, when someone finds a substance easy to produce, non-toxic and that provides a multitude of different usage, you get a blockbuster in the industry. This is the case of lecithin. Sunflower and Soya beans are some of the most popular cultures in the world in the past 50 years. When we discovered all the different roles this substance could play, it became a flagship in many industries. Two of these industries are really developing very well in the past 10 years: Dietary supplements and Chocolates.

Being a natural material, Soy lecithin became a very popular ingredient and being used at less than 1% in different formulas there is almost no risk to humans.

How To Extract Lecithin from Soya Beans?

In order to extract lecithin from Soya beans, there are several processes. The most natural one has 2 steps. The first step is to squeeze or press the soybeans to extract the oil. This step happens by simple pressing the soybeans at normal temperature. The second step is to extract the lecithin from the oil. The process requires to blend the soybean oil into the water.

The mixture is then added to a centrifuge to separate the degummed soybean oil and mucilages (soy muds). Raw soybean sludge undergoes drying to yield raw soy lecithin, which in turn undergoes a set of operations before being marketed.

There are also other methods to extract soy lecithin with petroleum solvents which is a bad thing if we want to use it in food. Traces of solvents can be found in this lecithin.

Another challenge with soy lecithin is the origin of the soybeans and if the crops are genetically modified or not. While Switzerland has opted for non-transgenic animal feeds (https://www.sojanetzwerk.ch), and therefore for non-transgenic soybeans, there is a worldwide increase in transgenic soybean (GMO) cultivation. It is currently estimated that around 82% of the soybeans produced in the world are genetically engineered (transgenic). Of the top three producers, the USA, Brazil and Argentina, only Brazil produces a significant amount of non-transgenic soy. The USA produces about 94% of transgenic soybean and 100% Argentina. The non-transgenic (non-GMO) soybeans imported by the EU and Switzerland are therefore sourced from Brazil and Europe.

In 2014, in Switzerland, the harvest amounted to 3’882 tons of soybeans. The UN World Food and Agriculture Organization (FAO) estimates that global soybean production will reach 330 million tonnes in 2020. In 2017, 96% of the soybeans imported into Switzerland for a starter came from responsible production. The degree of achievement of this goal is measured annually.

The Role Of Soy Lecithin In Making Chocolate

Many friends asked me why can we find Soy lecithin in Swiss chocolate? To answer this question, we need to understand the role of lecithin and why it is important for certain brands to add it to some of their products.

The nontoxicity of lecithin leads to its use with food, as an additive or in food preparation. It is used commercially in foods requiring a natural emulsifier or lubricant. In confectionery, it reduces viscosity, replaces more expensive ingredients, controls sugar crystallization and the flow properties of chocolate, helps in the homogeneous mixing of ingredients, improves shelf life for some products, and can be used as a coating.

We tend to say that 100% pure cocoa butter chocolate is the best quality. Nevertheless, the aspect of the chocolate is less beautiful as a thin white coating might appear. The cocoa butter separates from the rest and crystallizes on its surface. Also if you are looking for a shiny coating you might have some trouble to obtain this result without the help of lecithin. Lecithin operates as a natural emulsifier, meaning keeping the fat (cocoa butter) together with the hydrophilic ingredients (like sugar and milk).

In principle, lecithin is present at a very low percentage in chocolate (between 0.3 to 1% of the weight of the chocolate). Depending on the amount of soy in the chocolate, it will be more fluid or more compact.

In conclusion, Soy Lecithin is not a bad thing in Swiss Chocolate. If the Soybeans from which it is made of comes from a reasonable, non-GMO-crops, it remains an interesting emulsifier.

2019 Monaco Grand Prix highlights, on and off the track

Jetsetters, celebrities and VIPs were out in force to watch the race action and party at the 2019 Monaco Grand Prix. Highlights were many – on and off the track – but Lewis Hamilton certainly wrote a new page in the history of motorsport by clinching his third Monaco Grand Prix win after a very tense race.

Monaco’s homegrown talent Charles Leclerc had a difficult weekend, first in the qualifying session, where a misjudgement by the Ferrari team resulted in him qualifying 16th, then on the big day, where a puncture put an end to his race. While the safety car was on the track to remove debris resulting from this incident, Valterri Bottas (Mercedes) Sebastian Vettel (Ferrari) and Max Verstappen (Red Bull) switched to hard tyres but Mercedes put Hamilton on mediums, leading him to drive 67 laps on tyres designed to last for no more than 50. As if Hamilton’s concerns about his tyres wearing before the end of the race were not enough, Verstappen made a lunge to overtake him two laps from the end and the two cars collided, fortunately with no serious consequences. Hamilton later described the race as the hardest he’d had.

As always, many people opted to attend the Grand Prix on a Monaco yacht charter. The Principality’s famous Port Hercules harbour was lined with yachts and many more were moored further out to sea. From elevated areas of Monaco,  tenders could be seen ferrying visitors between action onshore and onboard. Some visitors splashed out upwards of 2,450 euros for a weekend trackside yacht package to watch the best moments of the Monaco Grand Prix 2019.

Balconies around the Grand Prix circuit were packed. Tickets for “elite” VIP packages, which included panoramic views of the track, gourmet catering, champagne and cocktails with entertainment from a DJ cost around 2,850 euros for the weekend. Guests at the Formula One Paddock Club on the Rascasse corner of the harbour paid 5,802 euros for two days, which entitled them to a view of the pit entry, access to the pit area and a dining lounge, as well as a guided lap before the races.

Events organised by Amber Lounge were, as they have been since 2003, among the 2019 Monaco Grand Prix highlights off the track. Sonia Irvine – sister of former Formula One driver Eddie Irvine and long-time Monaco resident – is the helmswoman of these ultra-glamorous pop-up Grand Prix experiences, which also take place in Abu Dhabi and Singapore.

The “Ice White”-themed Amber Lounge Charity Fashion Show on Friday 24 May at the Meridien Beach Plaza hotel set the glamour bar high for other Grand Prix events. The particularity of this show is that F1 drivers and women involved in F1 in some way take to the catwalk, as well as professional models. 

Charles Leclerc was first on the beachside catwalk, where he was joined by George Russell (Williams), Antonio Giovinazzi (Alfa Romeo), Esteban Gutierrez (Mercedes), Jack Aitken (Renault), Guanyu Zhou (Renault) and Sergey Sirotkin (Renault), Nicholas Latfi (Racing Point). The drivers modelled chic menswear by Christopher Bates.

HSH Prince Albert II of Monaco attended the show, where Princess Märtha Louise of Norway, Victoria’s Secret model Josephine Skriver, Pamela Anderson – with boyfriend Amil Rami and son Brendon Lee –  Freddie Hunt, Eddie Irvine and Chachi Gonzales were also among the star-studded audience.

Alfa Romeo’s Tatiana Calderon swapped her racing boots for high heels to make her Amber Fashion debut with the “Ladies of F1” modelling Yolancris (whose clients include Lady Gaga and Beyoncé). The racing driver was joined by Lee Mckenzie (BBC TV), Natalie Pinkham (Sky Sports UK), Tamara Boullier, and “Mrs Amber Lounge”, Sonia Irvine, with her young daughter Katie. The Amber Lounge Charity Fashion Show also marked the European launch of Ladyship swimwear by Lady Victoria Hervey.

Lots at the Amber Lounge’s traditional silent auction in aid of Sir Jackie Stewart’s foundation Race Against Dementia were numerous. They included luxury jewellery, VIP travel experiences and objects such as a mini F1 helmet signed by Lewis Hamilton. When guests were asked who would be willing to donate 10,000 euros to the charity without bidding for a lot, Pamela Anderson was one of several people who raised their hands.

DJ Sigma provided the high energy soundscape at the after party, where the vibe was euphoric and the entertainment included robots on stilts.  

Amber Lounge after party guests over the weekend included NBA star Rudy Gobert, Rugby players Sam Warburton and George North, AS Monaco player Nacer Chadli, Red Bull athlete Lindsay Vaughn and PK Subban.

Victoria’s Secret model Josephine Skriver, TV star Olivia Culpo, Blaise Matuidi, Mark Cavendish and model Madison Headrick were among the guests aboard Amber Lounge’s trackside tri-deck yacht over the race weekend.

Across the city-state, people partied. Restaurant terraces with live screenings of the Grand Prix were fully booked and Monaco’s famous venues pulled out all the stops. At Sunset, the beach club on the terrace of the Meridien Beach Plaza, the vibe was laid-back luxury with live bands and DJs providing the soundtrack. On the other side of Monaco, the atmosphere at the Rascasse was wilder and louder. On the rooftop of the Fairmont Monte Carlo, next to the Grand Prix’s hairpin bend, a series of parties with music by the likes of saxophonist and electro, deep, funk and freestyle house aficionado Jimmy Sax kept Nikki Beach guests entertained.

Monaco’s first Grand Prix took place in 1929 and the event became part of the FIA Formula One World Championship in 1950. According to the FIA, some 200,000 people now head for the glamorous city-state to watch the F1 each year. Many others come to party. But whatever their reasons for coming, this year’s crowd have left with their own versions of 2019 Monaco Grand Prix highlights.

Apart from performing your daily tasks like playing music, helping with shopping list creation and announcement of weather, AI is an ever evolving technology. What if these digital assistants learn more about you, hold a conversation and interact with you on an entirely new level?

Google Duplex is made smart in a way that when it communicates it sound like a human talking to another human. LUXSENS is appealing to the price-savvy customers who want to purchase luxury items at a lower price. With Big Data involved, this brand allows customer to learn about the price fluctuations on different locations so that they can get their preferred brand at a reasonable price.

Fashion brands that too favor AI are Stich-Fix and Thread. These luxury brands use big data algorithms that works when the customer feeds the information through a set of questions asked in a survey. This algorithm helps the brand to decide the best look for their client within their budget, size and style that they are looking for. This mechanism has helped these brands build identity and loyal customers.

You encounter AI every day without recognizing – when surfing internet for a book on Amazon or TV show on Netflix, these apps or websites drop a list of recommendations to read or watch. How does this work? This Deep Learning algorithm recommends you from your early purchases or watched movies or TV shows on the similar platform.

Moreover, AI filters your incoming emails and sways away spam mails from your inbox based on the content of the email.

Those who do not know the true potential of this technology will encounter soon in the coming years. Artificial Intelligence has the potential to offer $15.7 trillion to the global economy by 2030.

With practice and experience Artificial Intelligence have successfully learned to drive. Exactly! After the launch of the autonomous car like Tesla, Waymo by Google, announced a 100% autonomous car prototype without any steering wheel, gas pedal or brake pedal.

Similarly, Audi made its first production of autonomous car with a Level 3 autonomy features (Vehicles that can drive themselves in certain situations and need human assistance when limits exceed) which works at a speed of 37 mph, in divided highways with clearly marked entrance and exit lanes.

In future, we will see Ford come up with a Level 4 vehicle (vehicles that can drive most of the time themselves and require human assistance at certain situations) by the year 2021. A luxury car manufacturing brand Volvo is expected to launch its fully autonomous car the same year. The car reportedly will have no gas pedal, no steering wheel.

Similarly, BMW too will launch a Level 3 autonomous vehicle by the year 2021 and is also expected to deliver Level 4 & Level 5 (Fully autonomous that need no manual assistance or control under any circumstances) capacity cars.

3- One Historical Book: Meditations by Marcus Aurelius

Fashion Police needed: The Return Of The Crop Look!

This week, we tried to join the Fashion Police because we cannot support one important thing: The return of the Crop! Seriously, it is a NO GO. With a certain revival of the 80’s / 90’s right now, we could see it not only in the streets but also in the catwalks and red carpets. Help!

It took a long time for the crop top to materialize in the West, partly due to a colder climate and partly because of Western fashion history’s notoriously puritanical dress code. It was during the late 40’s that crops started appearing in some looks thanks to the influence of orientalism. Belly dancers were at that time an icon for fashion.

Following decades would be the golden age for the crop top. A toned body and sportswear were trendy in the 1980’s, and the crop was perfect for showcasing that. The “aerobic” look- a cropped sweater paired with a leotard or tank is classic 80’s. The style was a favourite of Madonna, who made it a part of her signature look. The crop top frequently graced the silver screen during that period- it was styled on many iconic film characters, including Baby from Dirty Dancing and Alex in Flashdance.

The years 2000 represented the end of the Crop but recently we saw a certain revival of it, especially thanks to Marion Cotillard at Cannes 2019. Marion Cotillard is a very beautiful and elegant woman but these crop looks are just not possible. It is what we call in French “Ringard”, meaning “old-fashioned” and bad taste. Also, do not hesitate to look at the shoes… so bad. Even if it is Chanel and Balmain, it does not mean it is fine.

For sure I prefer Marion Cotillard look from Cannes 2013 when she appeared in a magnificent white gown by Christian Dior for the unveiling of her new film, The Immigrant. Marion let her dress do all the talking in the style stakes for the red carpet event, keeping accessories and make-up to a minimum. This is truly chic.
