LuxuryActivist experienced an amazing diner at Le Pont de Brent during the Nespresso Gourmet Weeks. During this experience we could enjoy and experience all the talent of Stéphane Décotterd, one of the most talented Swiss Chefs, today with a 18/20 Gault Millau and 2 stars at the Michelin Guide. He accepted to give an exclusive interview for our webzine and here is more about this amazing and talented Chef.

LuxuryActivist (LA): How did you get the passion for fine cooking?
Stéphane Décotterd (SD): The cooking vocation came to me quite young when looking at my mother while she was cooking. Nevertheless, I owe my discovery for the Grande Cuisine to my former Chef, Mr Gérard Rabaey. It was when I started working in his kitchen that I got a sort of revelation about my future job. 

LA: In a few words, how would you describe your restaurant, Le Pont de Brent?
SD: It is an institution in Montreux that I was lucky to resume with my wife five years ago. Since then, we do all our best to work with exceptional products by caring about the techniques and the cooking. We propose a creative cuisine varying throughout the seasons, associating the great gastronomic tradition to a certain modernity. 

LA: What is the recipe or accomplishment you would be the most proud of?
SD: Difficult to say… whenever I cook for my family and see them feast!

LA: How is Switzerland different from other great countries in cuisine like France from a Gastronomic point of view?
SD: We are fortunate to have a great culinary diversity. Mirroring our four national languages, each region has its own influences and culinary tradition.

LA: Would you have any future projects that you could share here with our readers (recipes, menus, travels…)?

LuxuryActivist (LA): Comment vous est-il venu la vocation pour la belle Cuisine ?
Stéphane Décotterd (SD)La vocation pour la cuisine m’est venue assez jeune en voyant ma mère cuisiner, par contre je dois ma découverte de la Grande Cuisine à mon ancien chef, Monsieur Gérard Rabaey. C’est en arrivant dans ses cuisines que j’ai eu véritablement une sorte de révélation sur mon métier.

LA: En quelques mots, comment définiriez-vous votre restaurant, le Pont de Brent ?
SD: C’est une institution à Montreux que j’ai eu la chance de reprendre avec mon épouse il y a cinq ans. Depuis, nous nous efforçons de travailler des produits d’exception en soignant les techniques et les cuissons. Nous y proposons une cuisine créative rythmée par les saisons associant la grande tradition gastronomique à une certaine modernité.

LA: Quelle serait la recette ou réalisation dont vous seriez le plus fier ?
SD: Difficile à dire… chaque fois que je cuisine pour ma famille et que les vois se régaler !

LA: En quoi la Suisse se distingue-t-elle d’un point de vue Gastronomique des autres grands pays de la Cuisine comme la France ?
SD: Nous avons la chance d’avoir une très grande diversité culinaire. À l’image de nos quatre langues nationales, chaque région linguistique a ses propres influences et tradition culinaires.
